This soup is so creamy and delicious. It is the perfect fall meal. It’s also healthy which is a major plus! For all you Trim Healthy Mamas, this is a S meal.

THM Cream of Mushroom Soup - S

Ingredients

  • 1/4 cup of grass-fed butter
  • 3 cloves garlic, minced
  • 1 1/2 pounds of thinly sliced portobello mushrooms
  • 1 onion, diced (I used green this last time)
  • Himalayan salt and freshly ground black pepper, to taste
  • 1 cup of heavy cream
  • 4 cups of chicken broth
  • 1/2 teaspoon dried thyme
  • 1/8 tsp of gluccie

Directions

  • Melt butter in a large stockpot over medium heat. Add garlic and mushrooms, and cook, stirring occasionally, about 5-6 minutes. season with salt and pepper, to taste. Stir in onion and cook, stirring frequently, until translucent
  •  reduce heat and stir in chicken broth, heavy cream and thyme. Cook for about 6-7 minutes stirring frequently
  • Last few minutes add in gluccie. Make sure you stir as you add so that it doesn’t clump
  •  If the soup is too thin, add gluccie as needed until desired consistency is reached.
  • Serve immediately.

Title: A Favorite THM Recipe from My Early Days

Hello friends,

For my very first recipe share, I’m bringing back one of my old faithfuls from when I first started Trim Healthy Mama back in 2014. This one has stuck with me through the years — it’s simple, satisfying, and feels like comfort food while still being totally on-plan.



Crockpot Creamy Cheesy Salsa Chicken


Ingredients
  • 1 pk. of chicken breast tenderloins
  • 1 can rotel
  • 1 8 oz. can tomato sauce
  • 1 pk. of 1/3 fat cream cheese
  • sea salt (to taste)
  • pepper (to taste)

Instructions
  1. Add chicken, cream cheese, tomato sauce, rotel, sea salt, and black pepper to the crockpot.
  1. Cook on low for 6-8 hours, or high for 4 hours.
  1. Serve on a bed of zucchini noodles or steamed riced cauliflower.

Why I love it: It’s simple, it doesn’t require fancy ingredients, and it always hits the spot when I want something that feels indulgent but stays in line with THM.

Hello friends,

Welcome to my little corner of the internet! I’m so excited to start this blog as a place to share and keep track of my journey with Trim Healthy Mama (THM). I first discovered THM back in December of 2014, and I still have so many favorite recipes from that time. Some of them came from blogs that aren’t even active anymore, so I want to save them here — partly for myself, and partly to share with anyone else who might be looking for them.

Along the way, I’ll also be sharing my own meals. Writing things down helps keep me accountable, and it gives me a way to look back and see what’s working (and what’s not).

Right now, my personal goal is to lose about 20 more pounds. For context:

  • Starting weight: 167.7 lbs (August 18)

  • What I tried: a 3-day water fast, then a 3-day egg fast

  • Where I’m at now: transitioning back into the THM way of eating

Back in 2014, THM worked incredibly well for me — I lost 30 pounds in less than 3 months just by following the original book. I’m hopeful it can be my reset button again.
