For my very first recipe share, I’m bringing back one of my old faithfuls from when I first started Trim Healthy Mama back in 2014. This one has stuck with me through the years — it’s simple, satisfying, and feels like comfort food while still being totally on-plan.
✨Crockpot Creamy Cheesy Salsa Chicken✨
Ingredients- 1 pk. of chicken breast tenderloins
- 1 pk. of 1/3 fat cream cheese
Instructions- Add chicken, cream cheese, tomato sauce, rotel, sea salt, and black pepper to the crockpot.
- Cook on low for 6-8 hours, or high for 4 hours.
- Serve on a bed of zucchini noodles or steamed riced cauliflower.
Why I love it: It’s simple, it doesn’t require fancy ingredients, and it always hits the spot when I want something that feels indulgent but stays in line with THM.
